Understanding intrinsic and extrinsic factors involved in contamination of foods by pathogenic microorganisms, and developing novel methods and strategies for rapid detection and control of bacterial pathogens and toxin-producing microorganisms in the food chain and the environment: To this end, results from fundamental research in molecular microbiology and biochemistry are integrated and used to develop innovative applications.
